Prosciutto egg bites
Perfect opportunity to use up any leftover veges in the fridge the below is a list of leftovers I had in my fridge.
Ingredients
6 eggs lightly beaten
4 mushrooms roughly chopped
1/4 capsicum roughly chopped
1/4 red onion
1/2 zucchini grated
1/2 carrot grated
6 cherry tomatoes quartered
1 slice of prosciutto cut into 24 bit
Tasty cheese
Cracked salt and pepper
Method
Preheat oven to 180 degrees celcisus
1. Combine egg and veges in mixing bowl
2. Scoop mixture into 24 mini cupcake tin
3. Top each with cherry tomato, prosciutto and cheese
4. Season with salt pepper and mixed herbs
5. Bake 10 -12 minutes
