Healthy Dark chocolate banana bread made fresh for my mummy’s breakfast this morning. Goes really well with a little bowl of Greek yoghurt with a scoop of vanilla protein and blueberries
Ingredients
4 very ripe bananas mashed
1 3/4 cup oat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
Pinch salt
1/2 cup maple syrup or organic honey
4 tablespoon coconut oil
2 eggs
1/2 cup plain greek yogurt
1 teaspoon organic vanilla extract
100g 70-85% dark chocolate. roughly chopped
Method
1. Preheat oven to 180 Celsius
2. Prepare tin by spraying with non stick spray
3. Combine dry ingredients: Flour, baking powder, baking soda, salt, cinnamon.
4. Combine wet ingredients: beat maple syrup and softened butter together until light, fluffy and combined. Mix in eggs, followed by yogurt, vanilla and bananas.
5. Fold wet ingredients into dry, mixing until just combined.
6. Add in chocolate
7. Pour batter into loaf tin
8. Bake 25-30 minutes, until exterior is golden brown and center is cooked through.
9. Let rest and cool before removing from loaf pan.
Note: Should you wish to add the banana garnish on top of the loaf add it after the bread is 3/4 way cooked. Adding it at the beginning will result in some uncooked areas.
Tip:
1. I also love walnuts in my banana bread can also add when chocolate is being added.
2. Oat flour can be easily made by putting rolled oats in the food processor or blender.

I was never a big chocolate fan ( except for PB cups) until I found doark chocolate at varied %’s…. Good stuff So this must be a Greta snack and looks Gluten free( use the proper oat flour.

Definitely tastes great, I would have this as a snack but definitely as a component of a nice big breakfast as an alternative to the unhealthy banana bread or whenever I have too many bananas about to go off haha. Thanks for stopping by Marty

This is a great recipe! Thank you. My partner made it today and we love it… Using honey instead of sugar makes it sweet enough, but without it being sickly sweet.
