Sweet potato turkey meatballs & Spaghetti (Wholemeal)

Big carb loaded dinner the night before Brad’s pre season football game for APIA Leichaardt in NSW premier league.

In this meal I try to achieve a ratio of 70% carbs so I added some shredded sweet potato in the turkey mince as an extra carb hit. Such a good meal for a carb loading athlete and very tasty too :)

Ingredients for Meatballs

Turkey mince
Fresh parsley
Shredded sweet potato
Eggs
Spanish onion
Crack salt and pepper
Chilli powder

Ingredients for Sauce

Organic tomato paste
Organic canned tomatoes
Garlic
Fresh chilli
Chilli powder
Spanish onion
Zucchini
Carrot
Mushroom
Eggplant
Red capsicum
Dried Italian herbs
Cracked salt and pepper

Pasta
Wholemeal Spaghetti

Method

Salt the cubed eggplant set aside

Combine turkey mince, shredded sweet potato, egg, fresh parsley, salt and pepper, chilli powder, diced Spanish onion
Make into meatballs and set aside

Brown diced Spanish onion, garlic and fresh chilli.
Add tomato paste and cup of water and bring to boil on low to medium heat
Add canned tomatoes and another cup of water then season with salt, pepper and dried herbs
Bring to the boil on low medium heat
When starts to bubble add the meat balls and cover
Boil salted water for the wholemeal spaghetti
Separately roast the veges seasoned with salt, pepper and dried herbs. Remember to only partially cook so we don’t destroy all the good enzymes and nutrients
Cook the pasta
The meatballs will take about 15-20 mins to cook on medium to low heat when they are ready turn heat off and add the partially cooked veges

When pasta is ready serve with Parmesan and fresh parsley. So delicious!
