Classic Healthy Baba Ganoush Dip
Baba Ganoush
Ingredients
2 eggplant, Medium
1/2 Cup tahini
1/4 cup lemon juice
3 cloves garlic
1/4 level teaspoon salt flakes
1/2 level teaspoon cumin ground
Quality olive oil
1. Heat oven 180 degrees celcisus
2. Pierce eggplants all over with a fork and bake until they collapse.
3. Remove and allow to cool. Split down middle length ways and scoop out flesh.
4. Add all ingredients to a blender/food processor or a thermomix
5. Blend on speed 5 10 seconds. 6. Place mix in a bowl cover and refrigerate for 4 hours or overnight to allow flavours to develop.
6.Drizzle with olive oil & parsley before serving with warm pita bread.
Tip: I like to drizzle in a little extra olive oil when blending for a richer taste. A sprinkle of paprika to serve is also nice
