Homemade toasted Chia, Seed & Almond Granola
Ingredients
- 3 tbsp Coconut oil
- 3 tsp ground cinnamon
- 3 tsp ground nutmeg
- 1/4 cup organic honey
- 1/4 cup rice malt syrup
- 2 cups rolled oats
- 1 cup pumpkin seeds
- 1 cup Chia & Seed mix
- 1/2 cup of shredded coconut
- 1 cup roughly chopped almonds
Method
Preheat oven to 200°C.1. Combine the Coconut oil, cinnamon and nutmeg in a small heavy saucepan over medium heat and stir for 1 minute, or until has completely melted.2. Add the honey, rice malt syrup syrup, until the sugar dissolves and the mixture comes to a simmer. Set aside.3. Spray a large heavy baking tray with nonstick cooking spray.4. Combine the oats, chia seed mix and almonds in a large bowl.5. Combine syryup with oats mixture
6. Transfer the oat mixture to the prepared baking tray, forming an even layer.
7. Bake, stirring occasionally, for 40 minutes, or until the mixture is dry has turns a slight toasty brown.
8. Transfer the baking tray to a cooling rack and let cool completely. When cooled it will clump together just break it apart
Can store in an airtight container for up to 1 week.
Alternatively you can use this recipe to make muesli bars a healthy snack idea
I like to serve with greek yogurt, blueberries and cinnamon :)
