Prosciutto and lamb burgers with sweet potato wedges
My partners ideal meal is a burger and chips and this recipe couldn’t be more delicious
Ingredients
500gm lamb mince
3 slices prosciutto
2 table spoons chopped basil
1 lightly beaten egg
1 cup mushrooms sliced and roasted
1/2 eggplant sliced and roasted
1/2 capsicum sliced and roasted
Tomato sliced
Avocado
Tasty cheese
2 Sweet potato cut into wedges
Cracked Salt & pepper
Olive oil or oil of your choice can use coconut oil too
Method
1. Line a baking tray with non-stick baking paper.
2. Place lamb mince, finely chopped prosciutto, chopped basil, lightly beaten egg, salt and cracked black pepper in a large bowl and mix until well combined.
3. Preheat oven 180 degrees Celsius
4. Divide the mixture into 6 portions and shape each portion into a flat patty.
5. Place patties on prepared tray and refrigerate for 15 minutes.
6. Meanwhile place sweet potato wedges on lined baking tray and drizzle with olive oil then sprinkle cracked salt & pepper and mixed dry herbs. Bake for 15minutes or until golden brown
7. Heat a non-stick frying pan over medium heat.
8. Cook the patties, in batches if necessary, for 3 minutes each side or until cooked through.
9. Place patty, roasted mushrooms, capsicum, tomato, avocado and cheese on bottom wholemeal burger bun grill till cheese melts.
10. Top with salad leaves and bun then Serve immediately.
Note: baking the patties is a healthier alternative to frying
