Spiced Orange Roast Chicken & Vegetables

Ingredients 

  • 6 chicken Marylands
  • 1/3 cup fresh orange juice
  • 1/3 cup honey
  • 2 tsp olive oil
  • 2 garlic cloves, minced
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 orange, thinly sliced
  • Finely chopped chives, to serve

 Serves 6

Method

  1. Place the chicken in an ovenproof dish
  2. Add the orange juice, honey, oil, garlic, coriander, cumin and turmeric and gently toss until combined.
  3. Season with salt and pepper.
  4. Cover with plastic wrap and place in the fridge for 1 hour to marinate.
  5. Meanwhile preheat oven to 180°C
  6. Place the orange over the top of the chicken. Roast in the oven, basting with pan juices, for 30 minutes or until golden and cooked through.
  7. Place on a serving platter and top with chives to serve

 Roasted veges to accompany – I used Zucchini, carrot, sweet potato. When cooked drizzle the spiced orange pan juices over the plate and sprinkle with chopped chives
