Ingredients
Cubed eggplant (salted and excess fluid removed to extract bitterness)
Shredded Chicken
Shredded Zucchini
Shredded Carrot
6 Eggs
Broccoli
Turmeric powder
Chilli ground and flakes
Ginger ground
Garlic ground
Coriander ground
Parsley
Paprika
Coconut oil
Cracked salt and pepper
Method
Brown eggplant in coconut oil
Add chicken
Then Broccoli
Then shredded zucchini and carrot
Scramble eggs with spices then add to the veges
Season with salt & pepper
Serve & Garnish with parsley and paprika
Bradley’s is served with 2 slices of Rye Bread for the extra carbs he requires for Football training.
The juice is just pineapple and watermelon that I have frozen over night then chucked in to the blender with some water. Alternatively you can also add coconut water.
Served with herbal tea of choice, My morning ritual is Green Tea.
I had a few slips up last night with my weakness chocolate, so I got up this morning did a quick 6km run in 24mins and then nourished my body with this delicious high protein antioxidant breakfast.
